What does it mean to be Glatt Kosher?

For meat to be Glatt Kosher, it refers to a kosher animal slaughtered in a kosher way with flawless and smooth lungs upon inspection. 

The emphasis may be on the adult animal’s lungs to be deemed Glatt Kosher, any other physical defect on the animal, such as cuts, other illnesses, broken bones, and abnormalities, can consider the animal as non-kosher. 

Although the focus of being Glatt Kosher is the meat, it also means that the herbs and produce being served from the restaurant’s kitchen is thoroughly inspected from impurities.

When a restaurant is certified and labeled as Glatt kosher, it also means that food is watched over by a rabbi and prepared in the higher standard of kosher way.
